Here are some pictures from last week's meals. Please excuse the poor lighting.
The zucchini noodle dish was ok. Let's be honest with ourselves... zucchini noodles will never be able to replace the yumminess of pasta. We followed the recipe but I don't think the noodles were cooked long enough. Will note that for next time.
The meatballs were delicious!
I also want to share a pic of a salad I prepared for lunch. Blueberries, strawberries, goat cheese, walnuts and mixed greens. So good!
